Meat Filling for Arepas


Serves: 6 to 8

Ingredients

- 2 tablespoons olive oil
- 1/2 lb. ground beef
- 1/2 lb. ground pork
- 1 medium onion, chopped
- 1 clove garlic, minced
- 1 green chili, chopped
- 2 large tomatoes, seeded and chopped
- 1/2 teaspoon achiote powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon thyme leaves
- 1/4 teaspoon black pepper
- 1 teaspoon salt
- 8 pimento stuffed olives
- 1 tablespoon capers


Directions

- Place first 12 ingredients in Oster® Electric Skillet and cook until meat is done (about 20 minutes).
- Stir in olives and capers.
- Split arepas (see basic arepa recipe) and fill with meat. Serve hot.
- Fills 6 to 8 arepas.
