Pastina "Risotto" with Roasted Peppers and Broccoli

Ingredients

- 1 pound dried pastina (#78 Acini di Pepe)
- 5 tablespoons pepper-infused olive oil
- 2 tablespoons chopped garlic
- 3 cups broccoli florets
- 2 tablespoons chopped fresh thyme
- 3 cups chicken stock, canned low-salt chicken broth, or vegetable broth
- 3 red bell peppers, roasted, peeled, seeded and cut into 1/2-inch dice
- 1 cup freshly grated Parmesan cheese
- 4 tablespoons butter (optional)
