6 Tasty Homemade Ice Cream Sandwich Options to Try

Don't sit around waiting for the ice cream truck to come down your street this summer. Instead, use your ice cream maker to whip up fresh frozen confections and have it as part of an ice cream sandwich. 

Ice cream sandwiches are the perfect summer treat. Not only do they let you combine cookies with your favorite flavor of ice cream, but they also protect your fingers from melting ice cream. Try making one of these varieties of ice cream sandwich in your kitchen this year.

1. Classic Chocolate Chip Cookie Sandwich 
There's a reason that a scoop of vanilla ice cream between two homemade chocolate chip cookies is the go-to ice cream sandwich - it's delicious! Just as many people make their own cookies, you can make your ice cream too. Just plop a scoop of fresh vanilla ice cream between two soft cookies and enjoy.

2. Peanut Butter Cookies and Chocolate Ice Cream 
The only combination better than peanut butter and jelly is peanut butter and chocolate. Couple these classic flavors with peanut butter cookies and a scoop or two of homemade chocolate ice cream. Enhance the flavor by adding either chocolate sauce or peanut butter to this cookie sandwich. 

3. Molasses Cookie Sandwich
