4 Veggie-Filled Flatbreads

They're just the thing for an easy, delicious dinner or satisfying lunch. Here are four mouth-watering flatbread recipes to make in your Oster® Stainless Steel Convection Oven with Pizza Drawer:

1. California Cobb Flatbread 
All the tasty ingredients of a classic Cobb salad get a new twist in flatbread form. With chopped vegetables and a light yet creamy dressing, it's a fresh and flavorful meal.  

Ingredients:

  • 1 package store-bought pizza dough 
  • 3 tablespoons olive oil 
  • 2 large tomatoes, diced 
  • 1 can corn, drained 
  • 1 large avocado, diced 
  • 1 cup spinach, chopped 
  • 1/4 cup crumbled Gorgonzola cheese
  • 1/2 cup sour cream 
  • 1 tablespoon mayonnaise
  • 2 teaspoons lemon juice
  • Dash salt 
  • Dash pepper
  • 1 teaspoon minced garlic 
  • 2 teaspoons minced fresh parsley

Directions
Roll out dough, then brush with 1 tablespoon olive oil. Arrange tomatoes, corn, avocado, spinach and Gorgonzola cheese on top, then place flatbread in the Oster® Stainless Steel Convection Oven with Pizza Drawer and turn the dial to the Pizza setting to cook the flatbread. While flatbread is cooking, whisk together remaining 2 tablespoons olive oil, mayonnaise, lemon juice, salt, pepper, garlic and parsley to make the dressing. Once done cooking, remove flatbread from convection oven, let cool slightly, and drizzle with dressing before serving.

2. Roasted Vegetable Flatbread 
With aromatic, flavorful roasted vegetables, this delicious flatbread makes for a divine dinner. Simply pre-cook the vegetables for extra tenderness, then add to your flatbread.  

Ingredients:

  • 1 package pizza dough 
  • 3 tablespoons olive oil 
  • 1 large zucchini, sliced 
  • 1 head broccoli, chopped 
  • 1 cup mushrooms, chopped 
  • 1 large red bell pepper, chopped 
  • 1 red onion, sliced 
  • 2 teaspoons dried oregano 
  • 1 teaspoon dried basil 
  • 1 teaspoon garlic powder 
  • 1 cup grated Parmesan cheese 

Directions
Arrange sliced vegetables on sheet of aluminum foil and brush with 1 tablespoon olive oil. Place vegetables in the Oster® Stainless Steel Convection Oven with Pizza Drawer and cook at 350 degrees for 10-15 minutes to roast. Meanwhile, roll out pizza dough and brush with remaining olive oil. Top with roasted vegetables, and then place in the Oster® Stainless Steel Convection Oven with Pizza Drawer and turn the dial to the Pizza setting to cook the flatbread.  

3. Mediterranean Feta Flatbread 
Creamy feta cheese, tomatoes, olives and artichokes combine for a Mediterranean-inspired flatbread that's bursting with flavor in each and every bite. 

Ingredients:

  • 1 package pizza dough 
  • 4 tablespoons olive oil 
  • 3/4 cup sliced Kalamata olives
  • 1/2 cup artichoke hearts 
  • 1 cup cherry tomatoes, halved 
  • 1 cup feta cheese 
  • 2 teaspoons lemon juice
  • 1 teaspoon minced garlic 
  • 2 teaspoons minced fresh parsley 
  • Dash salt 
  • Dash black pepper

Directions
Roll out dough, then brush with 2 tablespoons olive oil. Top with olives, artichoke hearts, tomatoes and feta cheese. Sprinkle with remaining olive oil, lemon juice, garlic, parsley, salt and pepper, then cook in the Oster® Stainless Steel Convection Oven with Pizza Drawer at the Pizza setting. Let cool, then enjoy. 

4. Goat Cheese and Fig Flatbread
With smooth goat cheese, earthy figs and sweet caramelized onions, this rustic flatbread is one indulgent dish that makes for an effortlessly elegant dinner. 

Ingredients:

  • 4 tablespoons olive oil 
  • 1 large sweet onion, sliced 
  • 2 teaspoons brown sugar
  • 1 cup mushrooms, chopped 
  • 1 package pizza dough
  • 3/4 cup dried figs, diced 
  • 3 ounces goat cheese
  • 2 teaspoons dried rosemary

Directions
Heat 1 tablespoon olive oil to a large skillet, then add sliced onions and brown sugar. Cook on medium low heat, until sugar melts and onions become caramelized. Add mushrooms to skillet and cook until just tender, then remove from heat. Roll out pizza dough and brush with 1 tablespoon olive oil. Top with figs, goat cheese crumbles, caramelized onions and rosemary. Cook the flatbread in the Oster® Stainless Steel Convection Oven with Pizza Drawer at the Pizza setting. Let cool slightly and enjoy.
