Fresh Chimichurri Sauce for Steak

Chimichurri is a fresh and flavorful green sauce from Argentina that is used to top grilled meats. By combining just a few simple ingredients together in the Oster® Oskar™ 2-in-1 Salad Prep & Food Processor, you can quickly create delicious grilled dishes that your friends and family will love.

Traditional Chimichurri Sauce 
Chimichurri sauce recipes have been passed down through generations in Argentina. The basic recipe is made with a mix of herbs, oil and vinegar and garlic. While chimichurri sauce can be served over all kinds of grilled meats and seafood, as well as a dip for bread, it pairs especially well with juicy steak. You can marinade the meat in chimichurri overnight, or spoon the sauce over the steak immediately before serving. 

Ingredients:

  • 1 1/2 cups extra virgin olive oil 
  • 1/2 cup red wine vinegar 
  • 4 tablespoons minced garlic 
  • 1 cup fresh oregano 
  • 2 1/4 cups fresh parsley

Directions
Add all ingredients to the Oster® Oskar™ Food Processor attachment. Secure the lid to begin processing and continue until fully combined, about 1-2 minutes. Pour the sauce over steak in a bowl to marinade, or pour 2-3 tablespoons over cooked steak before serving. 

Twists on Chimichurri Sauce 
Traditional chimichurri sauce will always include oregano and parsley, but there are many ways you can customize the sauce for fun flavor twists by adding just a few extra ingredients. Try making these chimichurri recipes below. 

Zesty Lime Chimichurri
Fresh lime juice and additional herbs gives this chimichurri sauce a zesty, refreshing twist. 

Ingredients:

  • 3/4 cup fresh lime juice 
  • 1 cup fresh cilantro 
  • 1 1/2 cups extra virgin olive oil 
  • 1/2 cup red wine vinegar 
  • 4 tablespoons minced garlic 
  • 1 cup fresh oregano
  • 1 1/2 cups fresh parsley

Directions

Chimichurri with a Kick 
If you like a little extra spice with your steak, try this flavorful chimichurri sauce. 

Ingredients:

  • 3 tablespoons red pepper flakes 
  • 2 tablespoons chopped jalapeno pepper
  • 1 1/2 cups extra virgin olive oil 
  • 1/2 cup red wine vinegar 
  • 4 tablespoons minced garlic 
  • 1 cup fresh oregano 
  • 2 1/4 cups fresh parsley

Directions

Herb and Shallot Chimichurri
Shallots are another popular addition to the basic chimichurri recipe and perfectly complement grilled steak. 

Ingredients:

  • 4 shallots, halved 
  • 1 1/2 cups extra virgin olive oil 
  • 1/2 cups red wine vinegar 
  • 4 tablespoons minced garlic 
  • 1 cup fresh oregano 
  • 2 cups fresh parsley
  • 1 cup fresh mint 
  • 1 cup fresh cilantro
  • 1 tablespoon sea salt 
  • 2 teaspoons black pepper

Directions
Add all ingredients to the Oster® Oskar™ Food Processor attachment. Secure the lid to begin processing and continue until fully combined, about 1-2 minutes. Use as a marinade or pour over grilled steak and serve.
