Soups are hearty and filling, making for a satisfying lunch or dinner. You can make soups with tons of nutrient-rich vegetables and other healthy ingredients for a delicious meal. There are so many easy, one-pot recipes, and lighter options when you to enjoy soup as a meal. 

Here are four tasty and easy soup recipes that you can make in your Oster® Oskar™ 2-in-1 Salad Prep and Food Processor.

1. Tomato Basil Soup
Tomato basil is a classic soup flavor, but this recipe is anything but boring. Fresh herbs elevate this homemade soup far above the pre-made, canned varieties.

Ingredients:

  • 4 tomatoes
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 3/4 cup fresh basil
  • 1/2 teaspoon oregano
  • 1/2 small onion

Directions
Add all ingredients to your Oskar™ 2-in1 Salad Prep and Food Processor using the food processor attachment. Secure the lid to start the processor and process until fully combined, about 4-5 minutes. Once blended, pour into a saucepan and warm over the stovetop on medium high heat for 10-15 minutes. Serve with hearty wholegrain bread.

2. Chicken Tortilla Soup
This flavorful soup contains protein and vitamins for a healthy and quick weeknight dinner. The soup also incorporates fresh cilantro, which is great for detoxing and contains a high level of antioxidants. 

Ingredients:

  • 1 1/2 cups shredded cooked chicken
  • 2 tablespoons olive oil
  • 1/2 cup chicken broth
  • 1/2 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 avocado
  • 1/2 cup fresh cilantro
  • 1/2 can whole tomatoes, drained
  • 1 teaspoon cumin

Directions
Add all ingredients to the food processor attachment of your Oskar™ 2-in- Salad Prep and Food Processor. Lock lid in place and process 2-3 minutes, until smooth. Transfer to a saucepan and heat until warm. Pour into bowls and top with crumbled whole wheat tortilla chips, hot sauce or sliced jalapeno peppers.

3. Healthy Broccoli Cheddar Soup
Broccoli cheddar soup is one of the best comfort foods. A great way to lower the typical fat and sodium content is to use skim milk and lowfat cheese, along with extra broccoli, which contains a high level of nutrients and vitamins. Make your own broccoli cheddar soup at home with your Oskar™ 2-in1 Salad Prep and Food Processor to save calories.

Ingredients:

  • 4-5 carrots
  • 2 cups broccoli
  • 1 cup low-sodium vegetable broth
  • 1 tablespoon olive oil
  • 1 cup skim milk
  • 1/2 teaspoon onion powder
  • 1 tablespoon black pepper
  • 1 1/2 cups low-fat cheddar cheese

Directions
Use the Continuous Flow Attachment to slice carrots into a small bowl. Then, add the carrots and all the ingredients except for the cheese into to the food processor attachment. Secure the lid and process for 2-3 minutes or until fully combined. Transfer the mixture to a saucepan and heat over medium heat. Add the cheese and stir constantly until melted. Pour until bowls and serve with sourdough bread.

4. Turkey and Rice Soup
Turkey and rice soup provides lots of flavor and protein in every bite, making it a great option for dinner.

Ingredients:

  • 3-4 carrots
  • 3-4 celery stalks
  • 1 1/2 cups shredded cooked turkey
  • 1 small onion
  • 2 tablespoons olive oil
  • 1/2 cup chicken broth
  • 1/4 cup water
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup long-grain brown or wild rice

Directions
Slice the carrots and celery using the Continuous Flow Attachment. Then, add the carrots, celery and the rest of the ingredients into the food processor attachment. Secure the lid and process until fully combined, about 3 minutes. Transfer to a saucepan and add the rice. Bring to a boil, then reduce to medium-low heat and cook for 10-15 minutes. Pour into bowls and enjoy.
