5 Sweet and Savory Muffin Recipes

There's so much more you can do with muffins than simply adding blueberries or chocolate chips. Combining sweet and savory ingredients is an unexpected twist on the classic muffin, and deliver a whole new flavor sensation. You can also enjoy sweet and savory muffins in the morning as a tasty breakfast or as an afternoon snack that will give you the fuel to power through your day. 1. Ham and Cheese Muffin
Salty ham and rich, melted cheese are a match made in heaven, and when you give these flavor stars a sweet muffin base, the results are downright delicious.

Ingredients:

  • 2 1/2 cups flour
  • 1/4 teaspoon baking soda
  • 1 1/4 tablespoon baking powder
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 egg
  • 2 1/2 tablespoons canola oil
  • 1 1/2 cups buttermilk
  • 7 ounces ham steak
  • 8 ounce block cheddar cheese.

Directions
Heat the oven to 400 degrees and mist a muffin tin with cooking spray. In a large bowl add the flour, baking soda, baking powder, salt and pepper and combine. Then, add the egg, oil and buttermilk to the dry mix. Using your Oster® 5 Speed Hand Mixer, stir together on low speed for just 1-2 minutes, being careful not to over-mix. Slice the ham and cheese block using your Oster® Oskar 2-in-1 Salad Prep & Food Processor. Then, add the ham and cheese to the batter and combine. Fill each muffin cup with the batter until it is about three quarters of the way full, then bake for 20-22 minutes. Remove from tin, let cool and enjoy.

2. Thyme and Bacon Muffin
Who knew the humble muffin could be so sophisticated? Fresh thyme elevates a simple muffin recipe, while bacon adds a smoky and savory touch of flavor. And add an extra plus, they'll fill your home with a delicious aroma as they cook!

Ingredients:

  • 2 cups of flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons bacon powder
  • 1 3/4 cups milk
  • 2 eggs
  • 1/2 fresh thyme, minced
  • 10 ounces bacon, cooked.

Directions
Heat the oven to 380 degrees. In a large bowl combine the flour, garlic powder, onion powder, salt, pepper and baking powder. In another bowl, mix together the milk and eggs. Add the wet ingredients to the dry mix and stir together until just combined. Add in the thyme and bacon and stir together until fully incorporated. Then, mist a muffin tin with cooking spray and fill up each cup three quarters of the way full. Bake for 22-25 minutes or until golden brown. Let cool and enjoy!

3. Orange and Cranberry Muffin
Sweet orange and tangy cranberry blend together just perfectly for a fun muffin that looks as good as it tastes!

Ingredients:

  • 1/2 cup butter, softened
  • 1/4 granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1/2 cup light brown sugar
  • 1 cup milk
  • 2 eggs
  • Zest of 1 orange
  • 2 cups flour
  • 2 teaspoons baking powder
  • 2 cups fresh cranberries.

Directions
Heat oven to 425 degrees. With your Oster® 5 Speed Hand Mixer, beat the butter, granulated sugar, vanilla and brown sugar until smooth. Add the milk, eggs and orange zest for another 1-2 minutes. Next, add the flour and baking powder and stir together until just combined, being careful not to overmix. Fold in the cranberries. Spray a muffin tin with cooking spray and pour the batter in each cup about three quarters of the way. Cook for 15-18 minutes, then let cool and enjoy.

4. Feta and Tomato Muffins
These fresh and healthy muffins are great any time of day. Cooking tomatoes in the oven gives them an added sweetness that's complimented by the saltiness of creamy feta.

Ingredients:

  • 2 cups flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon baking powder
  • 1/2 teaspoon garlic powder
  • 2 eggs
  • 1 1/2 cups milk
  • 1/4 cup canola oil
  • 3/4 cup feta cheese cubes
  • 3/4 cup tomatoes, chopped.

Directions
Heat oven to 350 degrees. In a large bowl, combine the flour, salt, pepper, baking powder and garlic powder. In another bowl, whisk together the eggs, milk and canola oil. While mixing with a wooden spoon, gradually add the wet ingredients to the bowl of dry ingredients. Mix until combined, being careful not to over-mix. Then, fold in the feta and chopped tomato. After misting a muffin tin with cooking spray, fill each cup three-quarters of the way full with batter. Cook for 20-22 minutes or until golden brown. Remove from oven and let cool fully before enjoying.

5. Sweet Potato and Spinach Muffins
These creative muffins are made with a sweet potato batter for unique take on the classic muffin. The sweet potato contains tons of antioxidants, while the spinach adds a good-for-you boost of Vitamins A, C, E and K.

Ingredients:

  • 3 large sweet potatoes
  • 2 1/2 cups flour
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon salt
  • 1/4 cup light brown sugar
  • 2/3 cup canola oil
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 cup spinach, finely chopped.

Directions
Cut the sweet potatoes in half, then brush with olive oil. Place in a pan in your Oster® Large Digital Countertop Oven, set the temperature to 375 degrees and bake for 30-35 minutes. Once cool, peel the skin and then add the filling to a large bowl. Mash with a fork until smooth and set aside. Heat conventional oven to 325 degrees. In a large bowl, combine the flour, baking soda, baking powder, cinnamon, nutmeg, salt and brown sugar. In another bowl, whisk together the canola oil, eggs and vanilla. Mix the wet ingredients into the dry ingredients, then incorporate the sweet potato and mix together until smooth. Finally, fold in the chopped spinach fully. Mist a muffin tin with cooking spray and fill each cup three-quarters of the way full with the batter. Bake for 25-30 minutes, then remove and let cool before enjoying.
