- 1/2 skim or unsweetened almond milk
- 1 cup frozen blueberries

Raspberry Shallot Vinaigrette

- 1/2 cup olive oil
- 3 tablespoons red wine vinegar
- 3 tablespoons raspberry preserves
- 1 1/2 teaspoons Dijon mustard
- 1/4 cup coarsely chopped shallot
- 1 small garlic clove, thinly sliced
- 1/4 teaspoon salt or to taste.
Place all ingredients in blender and blend on the high setting until creamy. You can also enjoy this dressing as a spread on sandwiches or light sauce on cooked vegetables.
Green Detox Smoothie

- 1/2 cup kale
- 1/2 cup spinach
- 1/2 cup blackberries
- 1/2 banana, chopped
- 2 stalks celery, chopped

Cauliflower Alfredo Sauce
If you thought Alfredo sauce was a diet no-no, think again. The creative addition of cauliflower thickens up the sauce while cutting down on the amount of carbs and calories found in traditional Alfredo sauces.
- 2 tablespoons butter
- 4 cloves garlic, minced
- 5-6 cups cauliflower florets
- 1/2 cup skim milk
- 2 tablespoons olive oil
- 1 teaspoon pepper
- 1 teaspoon salt
- 1/2 cup grated parmesan cheese.
In a skillet over medium heat, saute the butter and garlic for 30-60 seconds. Bring 7 cups of water to a boil in a large pan and add the cauliflower, cooking for about 7 minutes. Add the cauliflower and 1 cup of water from the pot, and then add the butter, garlic, milk, olive oil, and salt and pepper. Blend until smooth, about 2 minutes. Next, pour the sauce into a saucepan over medium heat and add the cheese, stirring until it's melted and completely combined. Serve over a plate of pasta and enjoy.
This sweet and tangy salsa is delicious with tortilla chips or on top of tacos and burritos.
- 1 can pineapple chunks
- 1/4 yellow onion, chopped
- 1/4 teaspoon salt
- 1/2 tomato, roughly chopped
- 1/4 cup fresh cilantro
- Dash of lime juice.
Add all the ingredients to the blender jar. Press the Food Chop button and blend until combined. Pour into a bowl and enjoy.
