  • 1/4 cup golden raisins
  • 1/4 cup currants

  • 1 tablespoon sugar
  • 1 tablespoon honey
  • 1 teaspoon baking soda
  • 2 teaspoons caraway seeds
  • 3/4 cup buttermilk.

Place the raisins and currants in a small bowl. Cover the bowl with a warm, wet towel and allow to plump for a few minutes. In a large bowl, whisk together biscuit mix, orange zest, sugar, baking soda and caraway seeds. Add the buttermilk and honey and stir to combine. Next, drain the raisins and pat dry with a paper towel. Add the raisins and currants to the soda bread mix. Add half of the soda bread mixture into the waffle maker and close. Cook for 4-5 minutes, and flip halfway through to ensure even cooking. Repeat with the remaining soda bread mix. Serve with Irish butter on the side.
