4 Easy and Delicious Recipes Using a Rotisserie Chicken

Rotisserie chicken might just be one of the best-kept secrets for easier, faster meal prep. With just one rotisserie chicken, you can create several distinct lunch and dinners that you and your family can enjoy throughout the week, saving you valuable time. 

Here are four easy and delicious meals you can create with a rotisserie chicken:

1. Southern Charm Barbecue Chicken Sandwiches 
Slow cooking chicken over a barbecue pit is all well and good, but there are also quick and simple ways to enjoy delicious Southern flavors. You can shred the meat on a rotisserie chicken, mix it with a bold barbecue sauce and then top it all with cool, creamy coleslaw for an easy homestyle meal. Pair these chicken sandwiches with classic comfort food sides like potato salad or macaroni and cheese for a satisfying dinner. 


  • 2 cups rotisserie chicken, cut into pieces 
  • 1 cup barbecue sauce 
  • 1 cabbage
  • 3 large carrots
  • 1/2 cup mayonnaise 
  • 1/2 cup sour cream 
  • 1 tablespoon sugar 
  • 2 tablespoons white vinegar
  • Dash of salt 
  • Dash of pepper
  • Bulky rolls

Add the chicken to the Food Processor Attachment of the Oster® Oskar™ 2-in-1 Salad Prep & Food Processor Attachment and combine until just shredded, about 30 seconds. Add the barbecue sauce and process again to combine. Next, slice the cabbage and carrots with the Oskar™ into a large bowl. Add the mayonnaise, sour cream, sugar, white vinegar, salt and pepper and toss together. Assemble 2-3 spoonfuls of shredded barbecue chicken on each roll, and top with 1-2 spoonfuls of coleslaw before serving.

2. Spinach and Artichoke Chicken Quesadillas
Put a creative twist on classic chicken quesadillas by swapping traditional South-of-the-border flavors for a delicious combination of creamy cheese, artichokes and spinach. Serve alone with a sour cream dip or with a garden salad. 


  • 2 tablespoons olive oil 
  • 1 can artichokes, drained 
  • 1 cup fresh spinach
  • 2 cups rotisserie chicken, cut into pieces
  • Dash salt 
  • Dash pepper
  • 1 teaspoon garlic powder
  • Flour tortillas
  • 1 cup shredded mozzarella cheese

Heat 1 tablespoon of olive oil in the Oster® Titanium Infused DuraCeramic™ 12" Square Electric Skillet on the medium temperature setting. Add the artichokes and saute for 1-2 minutes, then add the spinach and continue cooking until wilted. Add the chicken, salt, pepper and garlic powder and stir for 1-2 minutes, then remove from heat. Add additional oil to the now-empty skillet, then place a tortilla in the center. Top with 1/4 cup of the chicken-artichoke mixture, then sprinkle with cheese. Place a second tortilla on top and press down with spatula to flatten. Cook until lightly browned, then remove from heat, cut into quarters and serve. 

3. Sweet Orange Chicken Stirfry
Why order takeout when you can make this easy orange chicken stirfry? Basic rotisserie chicken is transformed into a delicious Asian-inspired dish bursting with flavor and colorful vegetables. If you make a large batch all at once, you can have ready an easy lunch to bring to work for the entire week. 


  • 1 package white rice 
  • 3 celery stalks
  • 3 large carrots
  • 1 green bell pepper
  • 1 red bell pepper
  • 1 can baby corn, drained
  • 2 tablespoons vegetable oil 
  • 2 cups rotisserie chicken, cut into pieces
  • 1/4 cup green onions, sliced
  • 1 cup reduced-salt soy sauce 
  • 1 teaspoon onion powder
  • 1 tablespoon brown sugar
  • 2 tablespoons water
  • 2 tablespoons cornstarch

Cook rice according to package directions and set aside. Using the Oster® Oskar™ 2-in-1 Salad Prep & Food Processor, slice the celery, carrots and bell peppers into a large bowl. Heat oil in the Oster® Titanium Infused DuraCeramic™ 12" Square Electric Skillet on the medium temperature setting, then add the sliced vegetables and baby corn and begin to saute. Once the vegetables have softened, transfer to a bowl. Add the chicken, green onions, soy sauce, onion powder, brown sugar, water and cornstarch to the skillet. Stir together so the chicken is completely covered and cook until the sauce thickens. To serve, fill a bowl with rice and top with the sauted vegetables and the orange chicken.

4. Lemon Garlic Chicken and Pasta 
Did you know with a simple rotisserie chicken, you can make a delicious pasta to rival that of your favorite Italian restaurants? This recipe combines the chicken with the fresh and tangy flavors of lemon and capers for a satisfying pasta meal that's anything but boring. 


  • 1 package linguine
  • 3 tablespoons olive oil 
  • 2 garlic cloves, peeled and minced
  • 2 cups rotisserie chicken, cut into pieces
  • 1 cup breadcrumbs
  • 1/4 cup fresh lemon juice
  • 1 teaspoon onion powder 
  • 1 teaspoon salt 
  • 1 teaspoon pepper
  • 1/4 cup capers

Cook pasta according to package and set aside. Heat 2 tablespoons of olive oil in the Oster® Titanium Infused DuraCeramic™ 12" Square Electric Skillet on the medium temperature setting. Add the garlic and begin to saute. While garlic is cooking, place the chicken in a large bowl. Add the breadcrumbs and 1 tablespoon olive oil and toss until the chicken is fully coated. Add the chicken mixture to the skillet, followed by the lemon juice, onion powder, salt, pepper and capers, and stir to combine. Cook for 2-3 minutes, then serve.
