1. Turkey and Pesto Panini
This is a perfectly fresh sandwich for a bright spring day. Whether you pack this panini to bring to work, this is one sandwich you'll be coming back to again and again. Ingredients:

  • 1 loaf soft French bread, sliced
  • 1/2 cup pesto (store-bought or homemade)
  • 8 slices roasted turkey

Directions

Directions

Directions

Ingredients:

  • 1 medium eggplant, sliced
  • 1 medium onion, sliced
  • 1 red, orange or green bell pepper, sliced
  • 1 cup mushrooms, sliced
  • 1 tablespoon minced garlic
  • 1 tablespoon Italian seasoning
  • 1/4 cup red wine vinegar
  • 1/4 cup green olives, finely chopped
  • 4 slices mozzarella cheese
  • 1 multigrain baguette, sliced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Directions
Warm up the Oster® Extra Large Titanium Infused DuraCeramic™ Panini Maker and Indoor Grill to medium-high heat. Add vegetables and one tablespoon of oil to grill and cook until tender, seasoning with salt and pepper. Remove from heat and place aside. In mixing bowl, whisk together garlic, Italian seasoning, red wine vinegar, green olives and remaining olive oil. Toss grilled vegetables in vinaigrette mixture. Assemble paninis with vegetables and cheese slices. Grill until cheese begins to melt. Remove from heat and enjoy.
