3 Easy Make-Ahead Meals to Stay on Track

Nothing will wreck a diet like a busy schedule. There are smart strategies you can use to stay on track, however, and one of the most important is preparing easy and balanced meals ahead of time so you can enjoy a healthy meal on even the most rushed of days. 

Here are three easy make-ahead meals from breakfast to dinner that you can prepare to stay on track:

1. Veggie Breakfast Burrito 
Make sure you don't skip the most important meal of the day by preparing a healthy and delicious breakfast burrito ahead of time. All you have to do is heat up the burrito and go! You can make several burritos ahead of time and then freeze them to make things even easier. 

Ingredients:

  • 1 large whole-wheat tortilla 
  • 1 half zucchini
  • 1/2 cup scrambled eggs 
  • 1/2 green bell pepper, diced 
  • 1 tablespoon chopped yellow onion 
  • 2 tablespoons low-fat shredded Monterey Jack cheese 

Directions
Spiralize the zucchini using the Oster® Electric Spiralizer. Then spread the scrambled eggs, pepper, onion, zucchini spirals and cheese on the tortilla. Wrap up and heat to enjoy immediately, or freeze burrito to eat later.

2. Zucchini Parmesan
Fuel your day come lunchtime with this delicious zucchini parmesan recipe. It uses zucchini spirals made with the Oster® Electric Spiralizer and easy homemade avocado pesto for a light and fresh lunch that you can make and store ahead of time. 

Ingredients: 

  • 1 zucchini 
  • 1 teaspoon olive oil 
  • 1/2 avocado, mashed 
  • 1/2 clove garlic, minced 
  • 1 tablespoon pine nuts
  • 1 tablespoon minced basil 
  • 1 teaspoon black pepper
  • 1 tablespoon grated Parmesan cheese 

Directions
Spiralize the zucchini using the Oster® Electric Spiralizer. Place in a mixing bowl and add the remaining ingredients. Stir well to combine. Heat before serving or enjoy cold. 

3. Peanut Chicken and Zucchini Stir-Fry 
Skip the drive-thru on a busy night and instead prepare this tasty and wholesome dinner ahead of time. 

Ingredients:

  • 1 teaspoon olive oil 
  • 1 chicken breast 
  • 1/2 tablespoon peanut butter 
  • 2 teaspoons low-sodium soy sauce 
  • 1/2 zucchini 
  • 1/4 clove garlic, minced 
  • 1/2 cup shredded carrots 
  • 1/2 teaspoon red pepper flakes 

Directions
Cook chicken breast in oil in skillet over medium-high heat. Once cooked, add in peanut butter and​ 1 tablespoon soy sauce and brush onto chicken. Remove from heat. Spiralize zucchini using the Oster® Electric Spiralizer, then place in skillet. Add remaining 1 tablespoon soy sauce, garlic, shredded carrots and red pepper flakes and stir to combine. Serve on the side of chicken and enjoy.
