3 Easy and Healthy Lunch Ideas

Lunchtime doesn't have to be complicated - there are many delicious, healthy and easy-to-make meals you can create. The Oster® Oskar™ 2-in-1 Salad Prep & Food Processor helps you prepare fresh and great-tasting lunches in a snap, slicing, chopping and pureeing veggies and other ingredients with precision and ease. 

Here are three easy and healthy lunch ideas to try:

1. Kale Power Salad 
Need a power boost during your day? Reach for this Kale Power Salad that's packed with nutrients to keep you going. 

Ingredients:

For the salad:

  • 2 cups kale, torn into pieces
  • 3-4 carrots 
  • 1/2 cucumber, peeled 
  • 3 ounce crumbled goat cheese 
  • 3 tablespoons sunflower seeds 
  • 1/4 cup pomegranate seeds 

For the dressing:

  • 2 tablespoons olive oil 
  • 2 teaspoons white wine vinegar 
  • 1/2 teaspoon garlic powder
  • 3 teaspoons lemon juice
  • 1/2 teaspoon salt 
  • 1 teaspoon black pepper

Directions
Add the kale to a large bowl. Slice the carrots and cucumber into the bowl using the Oster® Oskar™ 2-in-1 Salad Prep. Add the goat cheese, sunflower seeds and pomegranate seeds and toss to combine. To make the dressing, add all ingredients to the Food Processor Attachment of the Oskar™. Process until combined then pour over the salad; enjoy.

2. Mandarin Coleslaw
With its satisfying crunch and fresh citrus flavor, this coleslaw delivers great taste in every bite. 

Ingredients:

  • 1/2 head cabbage 
  • 3-4 carrots 
  • 1 teaspoon minced fresh dill 
  • 1/4 cup bean sprouts 
  • 1/4 cup water chestnuts 
  • 1/2 cup mandarin orange pieces, drained 
  • 3 tablespoons walnuts 
  • 1 tablespoon sesame oil 
  • 1 tablespoon olive oil 
  • 2 teaspoons rice vinegar
  • 1 tablespoon lemon juice 
  • 2 teaspoons soy sauce 
  • 1/2 teaspoon ground ginger
  • Dash salt and pepper

Directions
Shred the cabbage and carrots into a large bowl using the Oster® Oskar™ 2-in-1 Salad Prep. Add the dill, bean sprouts, water chestnuts, mandarin orange pieces and walnuts to the bowl and toss to combine. Then, pour in the oils, vinegar and lemon juice and add the seasonings, then stir to coat cabbage. Chill before enjoying. 

3. Light Cobb Salad 
This Cobb salad features a Greek yogurt-based dressing that's lighter than ranch and other creamy dressing varieties. 

Ingredients:

For the salad:

  • 1 cup romaine lettuce
  • 1 cup baby spinach leaves
  • 1/2 cucumber, peeled 
  • 3-4 carrots 
  • 1/2 cup cherry tomatoes 
  • 3 ounces gorgonzola cheese 
  • 1/4 cup cooked turkey bacon, crumbled 

For the dressing:

  • 1 cup plain Greek yogurt 
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil 
  • 1/2 teaspoon salt 
  • 1 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 teaspoon onion powder

Directions
Place romaine and spinach leaves in a large bowl. Slice the cucumber and carrots into the bowl using the Oster® Oskar™ 2-in-1 Salad Prep. Add the cherry tomatoes, cheese and bacon and toss to combine. To make the dressing, add all ingredients to the Food Processor Attachment of the Oskar™ and process until smooth. Pour over salad and enjoy.
