3 Spring Soups You Can Make in Your Blender

When it comes to soups, why should winter have all the fun? Soups make a wonderful appetizer or main dish during spring, too - just switch to lighter recipes that use fresh ingredients and save the heartier stews for the colder months. 

With the Oster Pro® 1200 PLUS Blend-N-Go®, you can make a variety of delicious soups right in your blender, making prep easier than ever before. Here are three spring soup recipes to try this season:

1. Creamy Spinach-Yogurt Soup
With nutrient-rich and protein-packed Greek yogurt, this easy soup is a lean, green fighting machine. The yogurt provides a creamy base without the extra fat, while fresh herbs add extra fresh flavor. 

Ingredients:

  • 2 cups chopped spinach 
  • 2 1/2 cups water
  • 1/4 cup chopped chives
  • 3 tablespoons chopped parsley 
  • 1 1/2 cups low-sodium chicken broth 
  • 2 tablespoons olive oil 
  • 1 1/2 cups Greek yogurt 
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper

Directions
Add the spinach, water, chives, parsley and chicken broth to the Oster Pro® 1200 PLUS Blend-N-Go® and blend on high. Once combined, add the olive oil, Greek yogurt, salt and pepper and continue blending until smooth. Warm soup in a saucepan over medium heat before enjoying.

2. Turmeric, Ginger and Carrot Soup
This tasty soup will get you in the spring spirit, with its bright yellow color and zesty flavors. This recipe also delivers a healthy dose of nutrients - turmeric has important anti-inflammatory properties, ginger aids digestion and carrots contain the beneficial antioxidant beta carotene. 

Ingredients:

  • 1 1/2 cups roughly chopped carrots
  • 1/4 cup roughly chopped yellow onions
  • 2 tablespoons olive oil 
  • 1 can coconut milk 
  • 1 small piece peeled fresh ginger, roughly chopped 
  • 3 tablespoons minced garlic 
  • 2 cups reduced-sodium vegetable broth 
  • 3 teaspoons turmeric 
  • 1 teaspoon salt 
  • 1 teaspoon black pepper
  • 1 teaspoon cinnamon 

Directions
Cook the carrots first so that they're tender, either in the microwave or in the oven for 20 minutes at 400 degrees. Then, add the carrots, onions, olive oil and coconut milk to the Oster Pro® 1200 PLUS Blend-N-Go® and blend on high. Once combined, add the remaining ingredients and blend until smooth. Warm soup in a saucepan over medium heat before enjoying. 

3. Pea and Mint Soup
Springtime is a harmony of the senses - the air is filled with the scent of fragrant flowers as the birds chirp and the leaves on trees begin to grow. Enjoy a harmony of tastes and scents at the table with this Pea and Mint Soup, which perfectly balances fresh spring flavors. 

Ingredients:

  • 2 tablespoons olive oil 
  • 1/2 cup water
  • 2 cups peas
  • 1 1/2 cups reduced-sodium vegetable stock
  • 1 cucumber, cut into quarters
  • 1/4 cup fresh mint leaves 
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Directions
Add the olive oil, water, peas, vegetable stock and cucumber to the Oster Pro® 1200 PLUS Blend-N-Go® and blend on high. Once combined, add the mint leaves, salt and black pepper and blend until smooth. Warm soup in a saucepan over medium heat before enjoying.
