4 Protein-Packed Lunch Meals

During a busy workweek, preparing healthy lunch meals can take a backseat to grabbing takeout at the cafe down the street from your office. But you can prepare fresh, healthy and delicious lunch meals with minimal time and effort.

The secret is using the Oster® Titanium Infused DuraCeramic™ 12" x 16" Electric Skillet. You can create a big batch of a meal and then separate it into servings for work lunches. Below are four recipes for lunches you can make in your skillet - they include lots of protein so that you can get the fuel you need to power through the rest of your workday. 

1. Cranberry Turkey Quinoa Skillet
Turkey is a great lean protein to add to your diet, while quinoa is a healthy whole grain that supports cognitive function. It's the perfect thing to re-focus your mind for everything left on your to-do list. 

Ingredients:

  • 2 tablespoons olive oil 
  • 1 small yellow onion, chopped 
  • 1 pound ground lean turkey 
  • 1/2 teaspoon salt 
  • 1 teaspoon black pepper
  • 1 teaspoon minced garlic 
  • 1 cup reduced-sodium chicken broth 
  • 1 cup quinoa 
  • 3/4 cup dried cranberries 
  • 1/2 teaspoon nutmeg
  • 1 tablespoon chopped fresh thyme

Directions
Heat the olive oil in the Oster® Titanium Infused DuraCeramic™ 12" x 16" Electric Skillet on medium heat. Add the onions and cook for 1-2 minutes. Add the ground turkey, break the meat up with a spatula, and cook until almost fully cooked. Add the salt, pepper, garlic, broth and quinoa and stir to combine. Lower heat to medium-low and simmer until quinoa is cooked. Stir in the cranberries, nutmeg and fresh thyme and cook for an additional 1-2 minutes. Let cool before packaging.

2. Shrimp and Vegetables Skillet
This shrimp skillet contains nutrient-rich vegetables as well as protein to help you feel full without weighing you down. 

Ingredients:

  • 2 tablespoons olive oil 
  • 1 pound shrimp, peeled and deveined
  • 5-6 stalks asparagus, chopped
  • 1 red bell pepper, chopped
  • 1 zucchini, chopped
  • 1/2 cup chopped green onions
  • 1 teaspoon minced garlic
  • 3/4 cup reduced-sodium vegetable broth 
  • 3 tablespoons lemon juice
  • 1 tablespoon minced parsley 
  • 1 tablespoon minced tarragon

Directions
Heat the olive oil in the Oster® Titanium Infused DuraCeramic™ 12" x 16" Electric Skillet on medium heat. Add the shrimp and cook for 5-6 minutes. Then, add the chopped vegetables, broth, lemon juice and herbs. Cook for an additional 5 minutes, then reduce heat to medium-low and simmer until vegetables are tender and shrimp is fully cooked. Let cool before packaging. 

3. Southwestern Chicken Wraps
Cook up some chicken, vegetables and spices in your skillet and then wrap up the filling in tortillas for a delicious homemade lunch. 

Ingredients:

  • 2 tablespoons olive oil 
  • 1 pound chicken breast, diced 
  • 1 small yellow onion 
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 can corn, drained 
  • 1 can black beans, rinsed and drained 
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 teaspoons cumin 
  • 1 teaspoon nutmeg
  • 1 teaspoon chili powder

Directions
Heat the olive oil in the Oster® Titanium Infused DuraCeramic™ 12" x 16" Electric Skillet on medium heat. Add the diced chicken and cook for 6-7 minutes, and then add the vegetables, beans and seasonings and cook until chicken is fully cooked and vegetables are tender. Let cool before packaging. 

4. Sesame Beef
Flavorful sesame beef spices up lunchtime - enjoy on its own or with rice. 

Ingredients:

  • 1 tablespoon olive oil 
  • 1 tablespoon sesame oil 
  • 2 teaspoons minced garlic 
  • 1 pound flank steak, cut into thin strips
  • 1/2 cups water
  • 1 1/2 cups broccoli florets
  • 1/4 cup reduced sodium soy sauce
  • 1 teaspoon ground ginger
  • 1 tablespoon rice wine vinegar
  • 2 teaspoons honey
  • 3 tablespoons sesame seeds

Directions
Heat olive and sesame oils in the Oster® Titanium Infused DuraCeramic™ 12" x 16" Electric Skillet on medium heat. Add the steak strips and cook for 6-7 minutes. Add the broccoli and seasonings, and cook for an additional 5 minutes. Reduce heat to medium-low and simmer until steak is fully cooked and broccoli is tender. Remove from heat and toss with sesame seeds. Let cool before packaging.
