Pizza and a Movie

Gather everybody around to make delicious, homemade pizza! Kids love tossing dough and adding toppings to pizza pies.

MUSHROOM MINI PIZZAS

INGREDIENTS:
  • 1 can (28 oz) diced tomatoes, drained
  • 1 medium onion, chopped
  • 1 roasted whole garlic bulb
  • 1 tsp dried basil
  • 1/2 tsp dried oregano
  • 3/4 tsp salt
  • 1/2 tsp sugar
  • 4 cups sliced mushrooms
  • 1 small onion, halved and sliced
  • 1 tbsp olive oil
  • 1 lb prepared pizza dough*
  • 2 cups shredded part skim milk Mozzarella cheese
  • 1 cup shredded Provolone cheese
  • Yellow corn meal
DIRECTIONS:

In large saucepan, combine tomatoes, chopped onion, garlic, basil, oregano, ½ tsp salt and sugar. Bring to boil; reduce heat to low and simmer 20 minutes, stirring occasionally. Using your Oster® Immersion Blender, process the tomato mixture until fully blended. Remove from heat and set aside.

In your Oster® Electric Skillet, heated to 350° F., sauté mushrooms and sliced onion until mushrooms are browned; stir occasionally. Season with remaining 1/4 tsp salt.

Divide dough into 8 equal pieces; set 4 aside and cover with a towel. Shape 4 pieces into 4-inch circles. Combine Mozzarella and Provolone cheeses. Top each pizza crust with about 3 tbsp sauce, 3 tbsp mushrooms and 1/3 cup cheese. Arrange 4 on lightly greased baking sheet or double sheets of non-stick aluminum foil sprinkled with corn meal. Bake in preheated Oster® Toaster Oven at 425° F for 8 minutes or until crust is golden and cheese is melted and lightly browned.

Repeat with remaining ingredients to make 4 more pizzas.

Makes 8 mini pizzas

VEGETABLE FILLED ENCHILADAS

INGREDIENTS:
  • 2 cups enchilada sauce
  • 2 cups chopped zucchini
  • 1 medium onion, chopped
  • 2 large cloves garlic, minced
  • 1 tbsp corn oil
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup fresh or frozen whole kernel corn
  • 2 tsp chili powder
  • 1/2 tsp ground cumin
  • 8 8-inch whole wheat soft tortillas
  • 2 1/2 cups shredded 4 cheese Mexican cheese blend
DIRECTIONS:

Spoon 1 cup enchilada sauce into greased 13 x 9-inch glass or ceramic baking dish; spread evenly. Set aside.

In large skillet, over medium heat, cook zucchini, onion and garlic in corn oil until vegetables are tender; stir often.

Add black beans, tomatoes, corn, chili powder and cumin and heat, stirring occasionally. Remove from heat.

Spread 1/2 cup vegetable mixer down center of each tortilla; top with 2 tbsp cheese mixture; roll up and place, seam side down, in prepared baking dish. Spoon remaining enchilada sauce evenly over tortillas. Cover with non-stick aluminum foil and bake in preheated Oster® Toaster Oven at 350° F for 40 minutes. Remove foil and top with remaining cheese. Bake 10 minutes longer until cheese is melted.

Let stand several minutes before serving.

TOMATO SALSA

INGREDIENTS:
  • 1 large tomato, cut in quarters
  • 1 small purple onion, quartered
  • 1/2 medium green pepper, cut in 2-inch pieces
  • 1 large jalapeño pepper, seeded and cut in quarters
  • 1/4 cup cilantro leaves
  • 2 large cloves garlic
  • 1/2 tsp salt
  • 1/4 tsp coarse black pepper
  • Juice of 1/2 lime (about 1 tbsp)
DIRECTIONS:

Process tomato in your Oster® Chopper until coarsely chopped; transfer to a medium bowl. In your Oster® Chopper, combine onion, green pepper, jalapeño, cilantro and garlic; process until coarsely chopped.

Combine with tomato in bowl. Add salt, pepper and lime juice. Toss to blend. Allow to rest at least 15 minutes to blend flavors.

Serve with tortilla chips.

STRAWBERRY MANGO MARGARITAS

INGREDIENTS:
  • Margarita salt
  • 2 cups fresh or frozen strawberries
  • 1 mango, peeled and stone removed
  • 1/4 cup frozen limeade concentrate
  • 2 cups ice cubes
  • 1/2 cup water
DIRECTIONS:

Dip glass rims in water; coat in Margarita salt. Allow glasses to stand to set salt.

In your Oster® Blender, combine all remaining ingredients. Blend until smooth.

Spoon into prepared glasses.

If desired, garnish with lime slice or fresh strawberry.
