4 Party Dips to Make in a Blender
Serving dip with chips, vegetables or bread as an appetizer is a great way to feed your guests and get your party started. Next time you have a few friends over, try one of these four easy recipes for a dip that you can make in your blender.
1. Tomatillo Salsa
This mean, green spicy sauce goes great with tortilla chips, bite-size homemade quesadillas and even tacos. Start off by mixing 2 tablespoons of water, 3 medium-sized tomatillos (cut in fourths, without husks), 1/2 serrano pepper, a pinch of salt, a garlic clove and 1/2 cup chopped onion in your blender's jar. Mix on HIGH until your mix is smooth. Pour the salsa into a sauce pan and thicken by bringing the mixture to a boil then simmering for about five minutes. Let the salsa cool in bowl and stir in 1 teaspoon of lime juice and 2 tablespoons of chopped cilantro, then serve.
2. Tuscan Bean Dip
Keep a cheese knife by this creamy dip to let guests spread it on bread or wraps. It also goes great with pita or bagel chips. Pulse 1/4 cup olive oil, a pinch of salt, a glove of chopped garlic and 1 teaspoon of rosemary or thyme on LOW in your all purpose blender. Next, pour in a 15-ounce can of drained and washed cannellini beans, blending on HIGH and stopping intermittently to scrape the sides with a spatula. Mix until smooth and add lemon juice or more salt to taste.
3. Blended Hummus
You don't need a food processor to make this delicious Middle Eastern treat - it can be done in your blender in minutes and served with pita or vegetables. Mix 1/2 cup water, 1/2 lemon juice, 2 teaspoon salt, 1/4 cup olive oil, 1 teaspoon cumin, 1/2 teaspoon paprika and 2 tablespoons of tahini in your personal blender until smooth. Then add one 15-ounce can of drained and washed chickpeas (or garbanzo) beans and blend on HIGH, stopping to scrape the side and get rid of air pockets. Mix until smooth - add more beans for extra thickness. Store in refrigerator until before serving to set.
4. Simple Guacamole
Guacamole is the perfect dip for everything from a football game tailgate to a quiet dinner party. Serve with pita chips, tortilla chips or vegetables. Blend 1 1/2 medium-sized quartered tomatoes, 1/2 onion, 1/2 cup cilantro, 2 jalapenos and 2 tablespoons lime juice on a low setting until everything begins to mix. Add 2 peeled and pitted avocados with some salt and pepper to taste and blend on a medium speed. Once done blending, serve to your guests.
