3 Sensible, Seasonal Soups

Soup can be a great way to get the nutrients you need by combining a variety of seasonal vegetables. This spring, try making one of these soups in your performance blender using recently harvested ingredients. 

Herbal Asparagus Soup 
Look for asparagus at your local grocery store or farmers market for a great spring snack that carries an array of important minerals and vitamins. Mix this veggie with some of your favorite herbs for a tasty soup that you can make in your performance blender. Use these ingredients: 

  • 2 1/2 bunches asparagus 
  • 1/2 a stick unsalted butter 
  • Salt 
  • Pepper
  • 2 cups chicken broth 
  • 1/2 cup chopped onion
  • Minced garlic
  • 3 tablespoons olive oil 
  • 1/2 tablespoon chopped fresh rosemary 
  • 1 teaspoon minced thyme. 

Combine your ingredients in a saucepan over low heat. Mix in butter, salt, pepper and garlic to taste and bring the mixture to a simmer until your vegetables are soft. Let the food cool, then carefully pour into your performance blender. Blend on a low setting until you have a thick puree that you can enjoy with fresh baked bread for a spring meal.

Sour Pea Puree 
Similar to your asparagus dish, you can mix seasonal peas with other seasonings for a tasty puree. In addition to broth, salt, pepper and herbs, use another spring flavor - fresh-squeezed lime juice - to improve the taste. Lime can give your puree either a strong flavor or a slight hint that complements the pea soup. 

Super Green Spring Soup  
Many spring veggies blend into a bright green soup. Try this multi-vegetable recipe in your performance blender. Combine: 

  • 1 cup chopped shallots 
  • 1/2 cup fresh basil 
  • Garlic 
  • 1 cup water
  • Black pepper
  • Salt 
  • 1/2 avocado, pitted and peeled 
  • 3 tablespoons olive oil
  • 1 cup of greens (spinach, kale etc). 

Heat these ingredients until soft in a saucepan on low heat. Add to your high performance blender and blend on MEDIUM until you have a thick green soup loaded with nutrients.
