Recipes for a Perfect Picnic

Once the weather gets warm, there's no better way to enjoy a meal than sprawled out on a blanket in the sun. Picnics with loved ones are precious moments where you can take a much-needed break from the hustle and bustle of your daily responsibilities and instead savor sunshine and fresh flavors. The perfect picnic food involves simple preparation, transports easily and utilizes fresh ingredients to provide a light meal that you can leisurely eat and that won't weigh you down.

Grab a red-and-white checkered blanket and toss these recipes in your wicker basket for the perfect picnic this spring.

Chicken Caprese Sandwiches
A classic chicken caprese sandwich made with fresh basil delivers a delicious aroma with every bite. When paired with juicy grilled chicken, zesty balsamic vinegar, creamy mozzarella and plump tomatoes, this meal is a home run. It's also easy to transport, making it the perfect picnic meal.


  • 2 tablespoons extra virgin olive oil
  • 2 skinless, boneless chicken breasts
  • Ciabatta buns
  • 6 ounces mozzarella cheese
  • 1 large tomato
  • 1 bunch fresh basil leaves
  • Salt and pepper to taste
  • Balsamic vinegar.

Brush the chicken breasts with olive oil, and then cook on your Oster® DuraCeramic™ Electric Skillet at medium high heat for 5-6 minutes on each side, or until cooked through. Then, cut the chicken into strips. Slice the ciabatta buns down the middle and top the bottom slices with several pieces of chicken, two slices of tomato, a thick slab of mozzarella cheese and a few basil leaves. Sprinkle with salt and pepper, and place the top slices of bread on. For easy transportation to the picnic, wrap each individual sandwich in parchment paper and tie with a string. Since drizzling on the balsamic vinegar can make the bread mushy during transport, bring a small bottle of the vinegar with you to the picnic instead and add it to your sandwich before eating.

Grilled Vegetables Couscous
A picnic is incomplete without a fresh and tasty side. This one uses grilled vegetables and couscous to create a delicious accompaniment to the chicken caprese sandwiches that's packed with nutrients.


  • 4 tablespoons olive oil
  • 1 tablespoon sea salt
  • 1 green pepper
  • 1 red pepper
  • 1 yellow pepper
  • 1 zucchini, peeled
  • 1 red onion
  • 1 package couscous
  • Juice of half a lemon
  • Additional salt and pepper to taste.

Chop all the vegetables and lay on a large plate. Brush completely with olive oil and sprinkle with sea salt. Then, add the vegetables to your Oster® DuraCeramic™ Electric Skillet and cook at medium high heat for 6-7 minutes, until vegetables are soft and slightly browned. Make the couscous according to the package directions. Then, place the couscous in a large transportable plastic container and top with the vegetables. Drizzle the lemon juice over the mix, then add a little olive oil, salt and pepper. Gently toss, and refrigerate until you're ready to head out to your picnic.
