I can't find what the bread stages for a 1 lb. loaf are. The manual covers every other size, but I can't find for 1 lb. I like to pull the paddle out of the machine just after the last shape is done, but don't know at what time that happens.

Thank you for reaching out to Oster&reg;. We appreciate the opportunity to respond to your inquiry and we are sorry if the bread is sunken. There are several causes for bread to collapse or cave in (sunken top): First Causes: - Too much yeast - Liquids are present - There is not enough flour - Temperature of the liquids is not correct Recommendation: When correct salt and sugar amounts are used, a small increase of these two ingredients may be a remedy. Or, try reducing the water called for by 1/4 to 4 tablespoons. Second Causes: - High humidity or high temperatures are present Recommendation: At such time, add 1 to 2 tablespoons of flour or decrease the liquid. A quick-rise yeast may have been used. Also, please note that too much yeast will cause the loaf to have a coarse, open grain and a flattened or sunken top. We hope you find this information helpful. Have a wonderful day!

We have baked three different types, They all came out lily white. The bread seems to be done, but loaves aren't brown at all. Are we doing something wrong?

Thank you for reaching out to Oster&reg;. We appreciate your support with our brand. The Oster bread maker with expressBake have two settings: One setting can bake bread in 58 minutes. The bread is a little more dense in texture with this setting. The other setting is for baking loaves in 1 hour 20 minutes. The loaves baked with this setting are a little taller and more airy than the 58 minute breads. And if you wish to bake another loaf of bread, you must let the breadmaker cool for 20 minutes with the cover open. We hope this information is useful. We are making raisin cinnamon bread. Just one problem, we put the raisins in the dispenser. And it&rsquo;s suppose to drop automatically. The bread maker went through the steps automatically. But the dispenser never dropped the raisins into the bread dough. Why didn&rsquo;t &nbsp;the raisins automatically drop into bread dough??&nbsp;
