Air Fried Mushrooms Stuffed with Chorizo

These delectable mushrooms stuffed with spicy chorizo sausage make the perfect party appetizer.

  • ½ cup goat cheese, softened
  • 3 tablespoons Parmesan cheese, grated
  • 1 tablespoon fresh thyme, finely chopped
  • 1 tablespoon balsamic vinegar
  • 1 clove garlic, minced
  • ⅓ cup cured chorizo sausage, finely chopped
  • 2 tablespoons sun-dried tomatoes, finely chopped
  •  ¼ teaspoon chili pepper flakes
  •  16 cremini mushrooms or white button mushrooms (medium to large size), stems removed
  •  1 tablespoon olive oil
  •  ½ cup cashews, chopped and toasted


  1. Insert roasting rack in your Oster® air fryer. Lightly grease rack.
  2. Mash together goat cheese, Parmesan, thyme, vinegar, and garlic. Stir in chorizo, sun-dried tomatoes, and chili flakes. Spoon 2 teaspoons chorizo mixture into mushrooms.
  3. In two batches, place mushrooms on rack air fryer. Drizzle with oil. Cook on dual heat mode for 10 to 12 minutes or until mushrooms are tender and topping is golden brown.
  4.  Top with toasted cashews, serve and enjoy!
