Fresh Veggie Pizza with Quinoa Crust
Plant-based and gluten-free, quinoa makes the perfect crispy pizza crust to accompany your favorite veggies.
Ingredients:
- 2 eggs
- 2 tablespoons extra-virgin olive oil
- 4 cups cooked quinoa
- 2 teaspoons baking powder
- 2 tablespoons oregano
- 2 teaspoons powdered garlic
- ½ teaspoons salt
- 1 ½ cups pizza sauce
- 2 twigs rosemary
- ½ cup mushrooms, sliced
- 1 cup cherry tomatoes, sliced in halves
- ½ red onions, julienned
- ½ sweet peppers, julienned
- 1 pinch coarse salt
Instructions:- Pre-heat the oven to 400°F and grease a square pan of approximately 9 inches. Cover pan with greased wax paper.
- Blend eggs, extra-virgin olive oil, quinoa, baking powder, ½ tablespoon of oregano, and powdered garlic into your Oster Extreme Mix Blender. Blend on LOW for 30 seconds. Use a spoon to mix dough and blend for 20 more seconds.
- Moisten your hands and form dough into a ball. Spread dough over the pan, around ⅛-inch thick. Bake for 15 minutes.
- Remove dough from the oven and cover with pizza sauce. Sprinkle your desired toppings.
- Bake in the oven for 5 minutes. Serve while hot and enjoy!
