Ham, Cheese, and Egg Crepes

Ingredients:
  • Crepe Ingredients:
  • ½ cup flour
  • 3 eggs, lightly beaten
  • 1 egg yolk
  • ¼ cup milk
  • ⅓ cup water
  • 2 tablespoons butter
  • ½ teaspoon salt
  • Filling:
  • 6 eggs scrambled
  • 12 tomato slices
  • ¼ cup orange bell pepper, diced small
  • ¼ cup red onion, finely chopped
  • 6 thick slices ham
  • 1 cup mozzarella cheese, grated
  • 1 cup (2 sticks) butter
  • 2 tablespoons olive oil
Instructions:
  1. Mix flour, eggs, egg yolk, milk, water, and salt into crepe batter. Melt butter in your Oster® griddle; add crepe batter and stir.
  2. Cook over low heat, stirring constantly, until thickened. Sauté until golden on each side. Remove crepes to plate when fully cooked.
  3. Add filling to griddle and sauté until lightly cooked. Remove desired filling amount to crepes and fold crepes into quarters.
  4. Serve hot and enjoy!
