Ham, Cheese, and Egg Crepes
Ingredients:
- Crepe Ingredients:
- ½ cup flour
- 3 eggs, lightly beaten
- 1 egg yolk
- ¼ cup milk
- ⅓ cup water
- 2 tablespoons butter
- ½ teaspoon salt
- Filling:
- 6 eggs scrambled
- 12 tomato slices
- ¼ cup orange bell pepper, diced small
- ¼ cup red onion, finely chopped
- 6 thick slices ham
- 1 cup mozzarella cheese, grated
- 1 cup (2 sticks) butter
- 2 tablespoons olive oil
Instructions:- Mix flour, eggs, egg yolk, milk, water, and salt into crepe batter. Melt butter in your Oster® griddle; add crepe batter and stir.
- Cook over low heat, stirring constantly, until thickened. Sauté until golden on each side. Remove crepes to plate when fully cooked.
- Add filling to griddle and sauté until lightly cooked. Remove desired filling amount to crepes and fold crepes into quarters.
- Serve hot and enjoy!
