Quinoa Salad

• 1 cup quinoa
• 1 ½ cup chicken broth
• 2 scallions, chopped
• 1 cucumber, peeled and cubed
• 1 bunch parsley, roughly chopped

For the dressing:
• 1 shallot, finely chopped
• ¼ cup rice vinegar
• ½ cup olive oil
• 1 tsp. Dijon mustard
• Salt and pepper to taste


1.Fill water reservoir of your Oster® Food Steamer up to the maximum level and pour into rice tray quinoa and chicken broth. Adjust timer to 35 minutes.
2.In the meantime, prepare the dressing by mixing all ingredients in you Oster® Immersion Blender until they are incorporated.
3.Let it rest for a few minutes and remove from rice cooking bowl and let it cool.
4.In the same bowl, add cucumbers, tomatoes, scallions and half the dressing and stir. Serve the other half in a sauce pan to be served individually according to taste.
