Herb Stuffed Beef Tenderloin
• 2 pounds (800 grams) beef tenderloin
• 1 cup beef broth
• 1 tablespoon butter
• Vegetable oil
For the Filling:
• 2 ounces (50 grams) bacon, fried and chopped
• 5 ounces (150 grams) chicken breast
• ¼ cup cream
• ½ tablespoon rosemary, chopped
• 1 tablespoon thyme, chopped
• ½ tablespoon sage, chopped
• 1 tablespoon Chinese onion or chives, chopped
• 1 tablespoon parsley, chopped
For the Garnish:
• 2 potatoes
• 16 sage leaves
• 3 ounces (80 grams) butter
• Salt and pepper
For the Sauce:
• ¼ cup dry red wine (preferably Merlot)
• 1 shallot
• ½ carrot
• 1 garlic clove
• ½ cup beef broth
• 2 ounces (50 grams) butter
• Salt and pepper
1.Clean beef tenderloin and cut open across using a flexible, sharp knife to form into a 2-inch thick rectangle. Keep in the refrigerator.
2.In your Oster® Immersion Blender, process chicken, cream, herbs, bacon and season with salt and pepper.
3.Remove beef tenderloin from refrigerator, extend and sprinkle with salt and pepper on both sides then spread stuffing, roll not too tight and tie with kitchen twine.
4.In your Oster® Fast Multi-Cooker, select Sauté function (skillet graphic), press Start Cooking button, heat butter and oil, sear beef roll until browned, add beef broth and cover; select intelligent function Beef and Beans and press Start Cooking button. When you hear an audible signal, turn the pressure valve at the top of the cooker lid using a utensil with a long handle to be able to open it.
5.In your Oster® Fast Multi-Cooker, select the Sauté function (skillet graphic), press Start Cooking button, add wine, chopped vegetables and let it reduce to 1/3 its volume, add beef broth and reduce liquid to half the amount. When ready, drain and check seasoning and cover with butter sauce.
6.Peel and cut potatoes in thin slices (chips style) using a mandolin or knife.
7.In an abundantly greased tray, place potatoes and brush with butter, place one sage leave over each potato slice and cover with another slice on top, place wax paper and place on top a flat surface (tray). Transfer to the Oster® Digital Multifunction oven at 400˚F (200˚C) set to Bake and cook for 5 minutes. Potatoes will get crispy and turn transparent with the sage inside.
