Crudités are traditional appetizers derived from the French cuisine, consisting of greens, raw vegetables or fruits of different colors, accompanied by vinaigrettes and dips, which makes this dish a delight not only for the palate but also for the eyes.


• 9 oz. (250 g) carrots, thick julienne cut of about 2 inches (5 cm)
• 9 oz. (250 g) celery stalks, approximately 2 inches (5 cm) long and some with leaves at the tip
• 1 cup cherry tomatoes
• 1 cup raw cauliflower
• 1 cup broccoli
• 7 oz. (200 g) mushrooms

For the aioli (garlic mayonnaise) sauce:
• 4 crushed cloves garlic with a pinch of salt
• 2 egg yolks
• 2 cups olive oil
• ½ lemon (juice)

For the tapenade (olive spread) sauce:
• ¾ cup black olives
• 4 anchovy fillets in oil
• 1 tbsp. capers
• 1 clove garlic
• 1 tsp. fresh thyme or ½ tsp. dry
• ½ lemon (juice)
• 1 tsp. black pepper
• 6 tbsp. extra virgin olive oil


1. Arrange the vegetables on a tray.
2. Prepare the aioli and the tapenade sauce separately, by adding the listed ingredients to the jar of your Oster® Blender, except for the oils. Blend ingredients on medium speed for 30 seconds.
3. For the aioli Turn to high for 30 seconds, and gradually add oil by the filler cap.
4. For the tapenade, turn to high for 15 seconds, and gradually add oil by the filler cap.
4. Place each sauce in decorative bowls on vegetable tray.
