Creamed Corn and Spinach Smoked Salmon Sliders

• 1 large can creamed corn
• 1/3 stick of butter, melted
• 2 large eggs
• ¾ cup milk
• 3 ½ oz. feta cheese, crumbled
• 1 cup baby spinach
• 1 cup flour
• 1¼ teaspoons baking powder
• Oil, for cooking
• Salt and freshly ground black pepper, to taste
• Crème fraîche, smoked salmon and dill, to serve


1. Place corn, butter, eggs and milk into the blender jar. Secure the lid.
2. Blend on HIGH speed for 10 seconds.
3. Add remaining ingredients.
4. PULSE 10 times or until the batter is a solid green color.
5. Heat oil in a medium fry pan. Add 1 tablespoon of batter to the pan and cook for about 1 minute on each side. Repeat with remaining batter.
6. Serve topped with crème fraîche, salmon and fresh dill.
