Creamy Macadamia Nut Hummus
- 1 cup macadamia nuts (soaked for 2 hours prior to blending)
- ¼ cup lemon juice
- ½ cup water
- 1 tbsp shallot
- 1 garlic clove
- 1 tbsp scallion, finely chopped
- 1 tbsp dill, finely chopped
- 1 tbsp parsley, finely chopped
- 4 radishes, thinly sliced
- 10 small carrots
- 10 endives
- 4 stalks of celery, cut into 3 parts
- Salt and pepper
- Place macadamias, lemon juice, water, shallot, dill, parsley, scallion, and a pinch of salt and pepper into your Oster® Blender.
- Blend on LOW speed until mixture becomes soft, with no lumps.
- Add salt and pepper as needed. Serve with vegetables of your choice.
